Our Buccaneer Mackerel is a day-trip fish caught and handled with the highest standards. From the moment it comes aboard, each fish is bled immediately, spiked, and placed into an ice slurry, then packed on foam mats to protect its condition. Immediate bleeding is critical to remove blood while the fish is fresh, resulting in whiter meat and a cleaner, less "fishy" taste. Because Spanish Mackerel bruises easily - causing discoloration in the white meat - we handle every fish gently from landing and spiking to packing and delivery.
We supply our Spanish Mackerel whole, in portions, or cut into long de-boned fillets rather than traditional bone-in cutlets. The result is a beautiful, clean, firm white meat finished with a shiny, delicious skin.
