Also known as Spiny Crab, the Champagne Crab (Hypothalassia acerba) is a deep-sea delicacy, caught in small, limited batches from the southern waters of Western Australia. Prized in high-end Chinese markets, this rare species is valued for its subtle flavour and premium reputation.
Harvested from depths of 145–200 metres in cool, temperate waters, each crab is handled with precision to maintain its quality and presentation.
Sourced in low volumes from southern WA’s deep-sea fisheries.
